Layered Cole Slaw

Mom is sharing many of her summer salads with us.  What better way to use up the bounty of our gardens and not heat up our kitchens on these hot summer days.  This one is her layered coleslaw.  It is so good, filling and refreshing on a hot summer evening.  Let me know what y’all think of her version.

 

Ingredients:

  • 1 head of cabbage
  • 3-4 stalks celery diced
  • 1 large cucumber sliced thin
  • 3/4 lb bacon strips, cooked and crumbled
  • 1/2 head of cauliflower, chopped and crumbled
  • 1 medium bag frozen peas or fresh peas from your garden
  • 1 cup sliced green onions
  • 1 cup mild cheddar
  • 1 1/4 cups slaw dressing or homemade- see below

In large glass bowl, layer the vegetables and half the bacon in whatever order you like.  Top with the Cheese and remaining bacon and the dressing.

Cover and refrigerate several hours or overnight.  Garnish with tomatoes if you like.

Slaw dressing:

  • 1 cup mayonnaise
  • 1/2 cup sugar
  • 2 tablespoons vinegar

Mix together and pour over coleslaw
