Blueberry Cobbler

If you all like cobblers, you’re going to love my moms blueberry cobbler recipe.  It is so simple and yet so complex in flavors.  Don’t forget to plop a big dollop of ice cream on top while it is still fresh from the oven.

Ingredients:

2 tablespoons butter
2/3 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
2/3 cup milk
4 cups blueberries, rinsed and picked over
3/4 cup sugar
1 tablespoon lemon juice
1/8 teaspoon salt

Mix the blueberries, 3/4 cup sugar, lemon juice and 1/8 teaspoon salt in bowl and set aside.

Melt the butter in an 8×8 baking pan and preheat oven to 350 degrees.

In a small bowl, mix the flour, baking powder, salt, sugar and milk. Pour the batter over the butter.

Top with the blueberry mixture.

Bake for 55-60 minutes or until brown and bubbly.
