Tomato & Cracker Salad

This has to be one of my favorite summertime salads.  I love to just go in the garden and pick a tomato off the vine and eat it.  I also just love to make different summer salads.  These cool salads are just the thing for those hot summer days when you don’t want a big hot meal.

Grandma used to make this all the time and it became one of my go to meals when the heat has just beaten me down all day.  Plus, it is so easy to make you will be eating in no time.

 

Ingredients:

  • 1 sleeve saltine crackers
  • 4 large roma tomatoes (more meaty than juicy)
  • 1 cup mayonnaise
  • 1/4 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • Dash of hot sauce (optional)
  • 4 green onions sliced small
  • 1/2 teaspoon lemon juice (I used 1/4 cup lemon balm)
  • 1 cup shredded cheddar (optional)

In a large bowl mix together the mayo, paprika, salt, pepper, onion and garlic powder and lemon juice.
Add in the tomatoes, green onions and cheese if using and mix together well.
Refrigerate for 2 hours.  Add in the crackers just before serving so they do not get soggy.
