Vintage Sausage Cake

This y’all is one old recipe.  I had never heard of sausage cake, nor had my mom, but here it is. Oh, and this is not a breakfast bar type cake either.  She got this recipe from a family friend who had made it all her life.  It is an amazing cake and I tell you what, it does taste a lot better than you would think.  You all have to give this a try.

 

Ingredients:

  • 1 pound plain mild sausage
  • 1 pound light brown sugar
  • 1 cup raisins
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 3 cups all purpose flour
  • 1 cup English Walnuts (chopped)
  • maraschino cherries (optional
  1. First boil the raisins in just over a 1 cup of water till plumped up.
  2. Drain the raisins and set aside 1 cup of the raisin water to cool.
  3. Mix sausage and sugar thoroughly.
  4. Add the baking soda very slowly to the cooled raisin juice.
  5. Sift the flour, baking powder and spices together.
  6. Add liquids and flour alternately  to sausage mixture.
  7. Roll the raisins in a bit of flour to keep them from sinking to the bottom of the batter.
  8. Add the raisins and nuts to the mixture and stir well.
  9. Decorate with maraschino cherries if you like
  10. Pour into and bake in a tube or loaf pan for 1 hour and 15 minutes @350°F
  11. Let cool 15-20 minutes before cutting.
