Roast Chicken & Stuffing in a Slow Cooker

This is a great alternative for those who only have 2 or 3 in the house for Thanksgiving. Heck it is even a great meal for any night of the week actually. You can also substitute a Turkey Breast for the chicken if you are doing this on Thanksgiving. Let me know what you think about this and y’all enjoy.


Ingredients:

1 whole chicken, cleaned
Small bag of baby carrots
2-3 cups Brussels Sprouts, cleaned
1 medium onion cut into moons or diced
1/4 cup (1/2 stick) melted butter
2-3 teaspoons poultry seasoning
1 teaspoon paprika
2-3 cups dry stuffing mix
Salt and pepper to taste.

Wash and clean your veggies.
Place in the slow cooker and sprinkle with salt / pepper
Place clean chicken on top of the veggies and sprinkle with the poultry seasoning and paprika.
Cover and cook in slow cooker for 6-7 hours on low. Make sure chicken is at least 165°F.
Remove chicken and veggies to a serving platter and cover with foil.
Add the dried stuffing mix to the slow cooker and stir to mix.
Put lid back on slow cooker and let sit for 20 minutes.
Remove lid, fluff the stuffing mix and add to the serving platter.
