Pecan Sandies

Pecan Sandie’s are one of my favorite cookies to go to when I don’t want something really sweet. This is a nutty-buttery short bread type of cookie that just hits the spot. I take the extra step of rolling them in sugar before baking them to give them just that tiny bit of sweetness as you bite into them. 1 &  1/2 sticks butter, room temperature
1/2 cup granulated sugar (plus more to roll cookies in)
1 tablespoon ice water
1/4 teaspoon salt
1/4 teaspoon cinnamon
2 cups plain flour
1 cup finely chopped pecans

  1. In your stand mixer, cream the sugar and butter together until smooth
  2. Add in all remaining ingredients and mix on medium to combine. (will be a stiff dough)
  3. Place in a bowl and cover with plastic wrap.  Chill in the refrigerator for at least 30 minutes.
  4. Using a 1 or 1 1/2 inch cookie scoop make small dough balls and roll each in sugar.
  5. Place on cookie sheet and using a glass or something with flat bottom, smash cookies down to about 1/2 inch
  6. Bake in a 325°F preheated oven and bake for 20 minutes
  7. Remove from oven and let cool 5 minutes on cookie sheet then to cooling rack.
