Easter Jello Salad

This is one of moms favorite Easter salads.  It is made with cranberries, mandarin oranges and crushed pineapple so it really has a refreshing fruit flavor.  Y’all are going to love how she tops it of with sugared fruits.  Let us know what you think and how you change your jello salads up.

 

  • 1 can crushed pineapple (drained/reserve the juice)
  • 1 can mandarin oranges drained
  • 1 can cranberry sauce
  • 1 small tube Cool Whip® (or whipped cream like mom did)
  • 1 package cherry gelatin
  • enough water to add to pineapple juice to equal a cup
  • Sugared Fruit (see video)
  1. Put the drained pineapple and mandarin oranges in a large bowl.
  2. In a small pot add the pineapple juice and enough water to equal one cup fluid.
  3. Bring to boil and then add gelatin and cook for 3-4 minutes.
  4. While gelatin is cooking, add the cranberry sauce to the Cool Whip and mix well.
  5. Add to the pineapple/oranges in the large bowl and mix together.
  6. Remove gelatin from stove and add 4-5 ice cubes to bring down temperature.
  7. Add the gelatin mixture to the large bowl and mix well.
  8. Cover and refrigerate till set.
  9. You can top with sugared fruit or as mom did, colored coconut and jelly beans.
