Cuban Yuca with Mojo

 

Y’all this is the Cuban Yuca with Mojo that I made in our Cuban Christmas Eve meal with Olga.  I put the video below so you can see how we put it together. It’s where we made the Cuban Pork Roast and the Cuban Black Beans.

Yuca is a starchy root that cooks up much like potatoes and can be used in numerous ways like potatoes.  This version is with a onion and mojo sauce which gives the yuca an amazing flavor.

 
Ingredients:

  • 2 tablespoons olive oil
  • 2-3 cups yuca (cassava) sliced in 2-3 inch pieces
  • 1/2 sliced white onion
  • 1 teaspoon garlic
  • sprinkle of Adobo seasoning
  • 1/2 – 3/4 cup Mojo
  • Pinch of salt
  • Juice of half a lemon
  1. Boil  yuca till softened (just like boiling potatoes to mash)
  2. While yuca is boiling, prepare the mojo sauce
  3. In small sauce pan add olive oil and heat over medium burner till shimmering
  4. Add sliced onion and slowly caramelize
  5. Add garlic once onion is caramelized and cook 1 minute, don’t let garlic burn
  6. Add Adobe, salt and lemon juice.  Stir and cook 1 minute
  7. Add mojo and reduce heat and simmer 2-3 minutes
  8. Drain yuca and place on a platter
  9. Pour mojo sauce over yuca and serve.
