Peanut Butter Brownies

My granddaughter came over today and asked to bake something.  She is hardly ever in the car or house 5 minutes before she is asking what we are going to be making.  I am so glad she loves cooking/baking.  I hope I can do the same for my other grandchildren as well.

So after watching Bobbie Deen make a peanut chicken on his show by starting by making home made peanut butter, she knew one thing for sure.  She wanted to make home made peanut butter.  Within 5 minutes she came up with brownies utilizing the peanut butter.  With a quick check of the pantry I found I had no peanuts.  Talking her out of this was not an option.  She was already putting her shoes on so we could go to the market.  Which we did.

I will say her home made peanut butter turned out great.  After making the brownies she had half the peanut butter left and decided to make it into a frosting for the brownies.  She is quite the little thinker.  She asked if we had any white chocolate chips (praying we did so I didn’t have to go back to the store) that we could add to the batter.  So I found a bag and she measured out what she thought would be a good amount.

So here is Miss Chloie’s Home Made Peanut Butter Brownies.  Y’all, they are amazing, and I am not a big peanut butter eater myself.

Ingredients:

  • 1 stick butter, softened
  • 1/4 cup home made peanut butter
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 3 eggs – at room temperature
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup peanut butter or white chocolate chips (optional)
  1. In bowl of your stand mixer, blend the butter and peanut butter. 
  2. Add the brown and white sugar, beat well. 
  3. Add eggs, one at a time, beating well after each addition. 
  4. Add in vanilla. 
  5. In large bowl mix the flour, baking soda and salt, then add to sugar/butter mixture and continue beating until mixed well. 
  6. Stir in peanut butter (or white chocolate) chips.
  7. Pour into greased 9×13 inch baking pan.
  8. Bake at 350° degrees for 30-35 minutes or until lightly browned and a toothpick inserted in the center comes out clean.
  9. Let completely cool before frosting the brownies or the frosting will melt.

 

Peanut Butter  Frosting

  • 1-2 cups powdered sugar
  • 4 Tablespoons milk
  • 4 Tablespoons butter – softened
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup peanut butter
  • 1/2 cup peanuts (crushed) to sprinkle on top (optional)

 

  • In bowl of your stand mixer put 1 cup powdered sugar, salt, milk, butter, vanilla and peanut butter and mix well. (Add more milk if the frosting isn’t creamy enough or more of the powdered sugar if not thick enough.)
  • Again, only frost the brownies when they are cool.  Sprinkle with optional peanuts if you choose to do so.
