Santa Fe Chicken Foil Packets

Ingredients:

4 chicken breasts 7-8 ounces each
6-8 strips bacon cooked and crumbled
½ teaspoon chili powder
1 teaspoon onion powder
1/2 teaspoon dried mustard
1 teaspoon garlic powder
salt & pepper to taste
15 ounces black beans drained & rinsed
2 cups whole kernel corn
1/2 medium red onion diced
1 cup diced bell peppers any color
1 10 ounces Rotel® Diced Tomatoes & Green Chilies, drained
2-3 tablespoons candied jalapenos
½ cup Mexican cheese or Monterey jack, shredded

Place each piece of chicken on a strip of aluminum foil (make sure its big enough to enclose ingredients.
In large bowl mix the remaining ingredients except for bacon, jalapenos and cheese. Mix well.
Place a few jalapenos on each piece of chicken.
Spoon 1/4 mixture over each chicken piece.
Top each with 1/4th of the cheese and bacon.
Fold the foil around the chicken and seal to make a small packet.
Place on grill and cook 15-20 minutes. Assure that chicken is at least 165°F internally.
Serve in foil packet or transfer to plate.
