Bubble Up Enchilada Casserole

Y’all this is one of the easiest throw together casseroles ever.  I am not a big fan of canned biscuits, but in a pinch, they are a time saver.  I am going to try one of these recipes with home made biscuits like my friend Phyllis suggested.  I bet it will be awesome.  Give it a try and let me know what you think.

 

Ingredients

1 pound ground beef cooked
1 green pepper/diced
1 sweet onion/diced
1 can of Grands Southern Biscuits
1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon oregano
1 teaspoon cumin
1/4 teaspoon garlic powder
1 4ounce can green chili’s
1 10 ounce can enchilada sauce
1 – 1 1/2 cups grated cheddar

Brown the ground beef and add the onions and peppers to break them down some, 3-4 minutes
Add seasoning to the ground beef with a bit of water and mix well
Tear up the biscuits and distribute around the 9×13 baking dish.
Distribute the green chilis over the biscuits evenly, then pour over the enchilada sauce
Now remove ground beef mixture from heat and distribute evenly over the biscuits
Top with the cheese across the entire top of casserole
Bake in a 350°F oven for 20-30 minutes.
