Mom’s Spinach and Bacon Quiche

Are y’all looking for a quick and simple breakfast, lunch or dinner?  This is so easy to throw together and have on the table in no time.  It’s moms Spinach and Bacon Quiche.  It is so delicious and you can eat it hot or cold.  I actually love it cold as a quick lunch or snack.  Give it a try and let us know what you think.

 

Ingredients:

  • 1 baked pie crust
  • 2 cups milk
  • 4 eggs – beaten well
  • 1 teaspoon ground mustard
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 4-5 strips cooked bacon – crumbled
  • 1/4 cup finely chopped onion
  • 2 cups spinach, thawed and drained well.
  • 1 1/4 cup shredded sharp cheddar
  1. Make sure your spinach is well drained, squeeze out all the water.
  2. Mix all ingredients together in a large bowl.
  3. Pour into pre-baked pie crust
  4. Bake for 40 minutes in a preheated 400°F oven.
  5. Let cool 15-20 minutes before cutting.
