I just can’t get enough of summer grilling. Of course living in Ft. Lauderdale, Fl. that means I grill all year long. There is just something special about smelling that smoke coming off the grill. It takes me back to my childhood every time I grill.
This sauce is great not only on chicken, but is great on pork chops as well. I hope you all give it a try and let me know how you like it.
Ingredients:
- 4-6 pieces of chicken
- 1/2 cup balsamic vinegar
- 1/2 cup cherry preserves
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 1 tablespoon ginger
- 1/2 teaspoon chipotle chili powder
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
In medium saucepan, combine all ingredients and simmer for 5-8 minutes. Once cooked through, remove from heat and allow to cool before applying to chicken.
Grill chicken as you normally would with bone in or boneless chicken. Whichever is your preference. When chicken is almost cooked through, brush all pieces with the bbq sauce. Turn and brush other side. Allow to caramelize before turning to the newly brushed side.
