Cran-Apple-Almond Coleslaw

Ingredients:

16 ounce bag of coleslaw mix (combination of shredded cabbage and carrots), Yes I cheated today.
Two golden delicious apples-diced.
1/2 cup dried cranberries
1/2 cup slivered or sliced almonds
Dressing (see below)

Directions:

  1. Add the cabbage mixture a handful at a time to the bowl of dressing, stirring to combine with the dressing before adding more cabbage.
  2. Add till you get the consistency you like.  Some like a runnier slaw, some a bit more dry.
  3. Refrigerate for at least 2 hours before serving.
  4. You can store any leftovers  in an airtight container in the refrigerator for up to 3 days.

Cole Slaw Dressing

Ingredients:

¾ cup mayonnaise
4 tablespoons malt, cider or rice vinegar
1 tablespoon granulated sugar
1 tablespoon light brown sugar
Salt and pepper, to taste

Directions:

1. In a medium bowl, whisk together the mayonnaise, vinegar, sugars, salt and pepper to taste.
