Roasted Ranch Potatoes

Ingredients

• 1 lb. red potatoes, washed and quartered
• 1 packet Ranch Dressing Dry Mix
• 3 tbs olive oil
• 1 tsp salt

Instructions

1. Preheat oven to 425 degrees.
2. In a large bowl add the quartered potatoes and drizzle with the olive oil.
3. Add 1/2 of the envelope of Fiesta Ranch mix and salt, and toss well to coat each potato piece evenly.
4. Spray a baking sheet (cover with foil for easy clean up) with non stick cooking spray and spread out potatoes evenly on sheet.
5. Bake in oven until potatoes are cooked through, and edges start to turn dark brown, approximately 35-45 minutes. (toss around half way through)
