Million Dollar Vodka Sauce Ravioli Casserole

Ok, so I’ve taken the classic flavors of my Homemade Lasagna and made it even easier to serve it up to your family using frozen ravioli and even a store bought jarred pasta sauce. You can have this comforting casserole prepped and into the oven in under 15 minutes with things you probably already have in the pantry. That means this dinner is great for meal prepping and here is a major BONUS – it freezes amazingly well too! Let me know what you think about this version and y’all enjoy.

 

Ingredients:
1 large package of frozen ravioli’s (cheese or meat)
1 lb. ground beef
1 medium onion
1 green or red pepper
1 large jar of spaghetti sauce ( I used my home canned)
1 tablespoon basil
1 tablespoon oregano
1 teaspoon onion powder
1 teaspoon garlic powder
salt and pepper to taste
1 block cream cheese at room temperature
1 cup ricotta or cottage cheese
1/4 cup sour cream
1/4 cup parmesan cheese.
2 cups mozzarella cheese. (I might have used more…LOL)

Brown off the ground beef with the onion and pepper, and then drain fat.
While ground beef is browning, mix the ricotta, sour cream and cream cheese in a large bowl.
Once ground beef is browned, add the spaghetti sauce along with the basil, oregano, onion and garlic powder. Mix well and let simmer on low. Taste for salt and pepper and adjust as needed.
Add the frozen raviolis to the cheese mixture and toss to coat them well with the cheeses.
Ladle a bit of sauce into a prepared 9×13 baking dish and top with 1/2 the ravioli mixture.
Cover with half the remaining sauce and sprinkle with the parmesan cheese and about 1/2 cup of the mozzarella cheese.
Add remaining raviolis and spread evenly.
Pour remaining sauce over the raviolis and top with remaining mozzarella cheese.
Bake in a preheated 350°F oven for 45 minutes, until bubbly and cheese is melted & lightly browned.
