I know y’all have had your share of Pecan Pies, but have you ever tried a peanut pie? It is another slight variation on a southern chess pie. It is so rich and creamy. It of course compare to a pecan pie which is the hands down southern champion of pies (in my opinion). But let me tell you that it will become a favorite of yours in no time. So here is my version of a Peanut Pie.
- 1 unbaked pie crust
- 3 eggs
- 1 cup sugar
- 1 tablespoon flour
- 1/2 teaspoon salt
- 1 cup dark corn syrup
- 2 tablespoons molasses
- 1/4 cup butter (melted)
- 1/4 teaspoon salt
- 1 1/2 cups coarsely chopped unsalted dry-roasted peanuts – Honey roasted are great to use as well.
- Preheat the oven to 375 degrees F.
- In a medium bowl, beat the eggs well.
- In a separate bowl, combine the sugar, flour, and salt. Stir with a fork to mix them together well.
- Now add the eggs to this mixture and stir to combine.
- To the eggs you now add the corn syrup, molasses, and melted butter and stir with a fork and mix them together evenly.
- Now add the sugar mixture and stir to dissolve the sugar and combine everything together evenly and well.
- Stir in the chopped peanuts and mix well.
- Pour the filling into the piecrust. Peanuts will rise to the top
- Place in the 375° degree oven and bake for 10 minutes.
- Reduce the heat to 350° and bake until the filling is puffed up all over and filling is nicely browned, 40 to 50 minutes.
- Place on a cooling rack and cool to room temperature before cutting.
