This is a recipe from a family friend “Jean Swink” who passed away a few years ago. She would make these for all of us, family and friends. When she made them she would make around 100 at a time and freeze them. Let me tell you, these are great and even better with a big dip of vanilla ice cream on top. Just another of my childhood memories that I am pleased to share with you all.
My grandma Jean used to make these too, but covered hers with a caramel sauce. O.M.G. it was like a caramel apple and apple pie all in one.
- 6 Granny Smith Apples, peeled, cored and sliced
- 3/4 c. brown sugar
Syrup:
- 2 cups sugar
- 1/4 t. cinnamon
- 1/4 t. nutmeg
- 2 c. water
- 1/4 c. margarine
Bring all the above ingredients to a boil.
Dough:
- 2 c. flour
- 3/4 c shortening
- 1/2 c milk
- 1 t. salt
- 2 t. baking powder
Directions
- Preheat oven to 400 degrees F (200 degrees C). Butter a 9×13 inch pan.
- On a lightly floured surface, roll out dough into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place a sliced apple on each pastry square . Cut butter into 8 pieces. Place 1 piece of butter on each apple; reserve remaining butter for sauce. Divide brown sugar between apples. Sprinkle a little cinnamon and nutmeg over the apples.
- With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
- In a saucepan, combine the syrup ingredients. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
- Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.
