When I get a late night craving I decide to make mom’s Delicious & EASY Coconut Cream Pie. It always hit’s the spot. Utilizing her pudding recipe, it takes no time at all to have a great creamy pie. Let me know what you think about this version and y’all enjoy.
1 prebaked pie crust
2 cups milk
3 egg yolks
3/4 cup flour (all purpose)
1 cup sugar
pinch of salt
1 teaspoon vanilla
2 tablespoons butter
1 cup sweetened coconut
In large sauce pan combine the milk, egg yolks, flour, sugar and salt.
Stir well to combine and break up egg yolks.
Continue to stir over medium high heat until thickened. Do not leave pan. Continue to stir so it does not burn.
Once thickened, add in butter, vanilla and coconut. Stir to combine
Pour mixture into prebaked and cooled pie crust.
Let cool for 45 minutes to an hour before cutting.
