Cast Iron Breakfast Skillet

Y’all are going to love how easy it is to put this Cast Iron Breakfast Skillet together. Best of all, you can use what you have on hand to make it. Easy enough to do in the woods so to speak, since that’s just what I’ve done. Let me know what you think about this version and y’all enjoy.

 

Ingredients:
6 strips bacon, cut in lardon’s
1 pound diced frozen potatoes
1/2 onion – diced
6 eggs
1 teaspoon garlic powder
1/2 teaspoon thyme
salt / pepper to taste
1 cup grated cheese

In a cast iron skillet over medium heat, crisp the bacon.
Once bacon is cooked, add the onion and potatoes and cook till tender
Scramble the potatoes in a bowl and then add to the bacon/potato mixture.
Add in spices, and mix well to incorporate all together.
Top with cheese and place in a preheated 350°F oven till cheese melts, about 5 minutes.
