Since moving to Ft. Lauderdale I have missed quite a few things about living up in Tampa. One of the biggest is being away from my 3 granddaughters that live up there. One in particular is my granddaughter Chloie who as you all know is my little sous chef when she is at the house. Of course sometimes it seems as I am her sous chef.
She is here visiting us for a week over summer vacation and has already taken over my kitchen. I can’t complain though. I love cooking with her and all my grand-kids when I get the chance to. Chloie by far has become the most accomplished at this point and is right at home making recipes her own.
So last night she decided we needed a snack and she made us a cream cheese and salsa dip that our family has come to love. It is a very easy last minute appetizer or just plain snack that you can throw together at the last minute. It goes great with corn chips and as a veggie dip as well. If you like a warm dip, it heats nicely over a low heat in a heavy bottom sauce pan too.
Ingredients:
- 3 packages of cream cheese (at room temperature)
- 2-3 cups of salsa (more or less depending on the consistency you like. We like ours a bit thick)
- 1 teaspoon red pepper flakes (optional)
Combine the ingredients in your stand mixer (0r bowl) and mix till well incorporated. Add the salsa slowly to get to the consistency you prefer. It’s a whole lot easier to add more salsa then take it out….LOL.
