As most of you know, I love getting into my kitchen and baking up a storm. I grew up with the most talented women I know in the kitchen. I can remember year after year standing beside mom (and still to this day) baking peach and apple pies. Making more kinds of candies than I can remember, and of course all those wonderful down home southern meals. Then there was Grandma Jean. I spent so many weekends in the kitchen with her baking cookies and cakes. The most delicious farm house meals came right out of her kitchen and were embedded in my memories. Of Course the most southern meals came from Grandma Cortie and my Aunt Carol. These two beautiful ladies taught me the simplicity of cooking. Showing me that you could take the simplest ingredients (usually from the garden) and make a meal that would have you coming back for seconds and thirds.
So I have been influenced by the best when it comes to my cooking. I can prepare a spread fit for a king, or I can utilize what Grandma Cortie and Aunt Carol taught me, and go simple. So that is what I did with this recipe. Instead of breaking out all my usual baking ingredients and measuring out the necessary list of items to put together these cookies. I opted for a boxed cake mix. Aunt Carol taught me this trick and I still love it to this day. So here is my version of red velvet cookies from a cake mix. Oh, I decided to add white chocolate chips. Why? Because I can. LOL
Red Velvet Chocolate Chip Cookies
Ingredients
- One box of red velvet cake mix
- 2 eggs
- Just shy of 1/2 cup of vegetable or canola oil
- 1 cup white chocolate chips
Directions
Preheat oven to 350F.
Combine in a large bowl, the cake mix the eggs and oil. Combine the mixture thoroughly and then stir in the white chocolate chips.
Spoon onto baking sheets about a walnut sized amount of batter. I usually a small ice cream scoop to make sure I get equal sized cookies.
Bake for 13- 15 minutes. Cookies are finished when you can slide them around without them sticking to the baking sheet. Watch your cookies though. Different cake mixes and ovens can take less time to cook.
