Peanut Butter Christmas Crack Candy

Y’all, it is exactly like the name says.  It is Crack Candy.  You can not quit eating it. This year I decided to take my original Christmas Crack Candy recipe, and change it up a bit.  This year I used peanut butter chips instead off the chocolate chips for the topping.  I was amazed at the flavor combination.  It almost tastes like a Heath Bar candy bar.   I also made it with saltines this time instead of graham crackers.   I of course will be making this again before Christmas, along with the chocolate version as well.  Give this peanut butter version a try and let me know what you think.

Ingredients

  • About a sleeve and half of saltines
  • 1 cup unsalted butter
  • 1 cup packed dark brown sugar
  • big pinch of Kosher salt
  • 1 teaspoon vanilla extract
  • 1 bag peanut butter chips

1. Preheat your  oven to 350F.  Line a  11×17” baking sheet  with parchment paper, tin foil or silpat baking sheet.

2. Line up your crackers to cover the bottom of your baking sheet, fill in sides with broken crackers.2012-12-01 12.43.29

3. In a large  heavy duty saucepan, melt your butter and brown sugar  and cook over medium heat, stirring, until the butter is melted and the mixture is beginning to boil.  Once it begins to boil, continue boiling for 3 minutes, stirring constantly.2012-12-01 12.47.59  Remove from heat, add the salt and vanilla ( it will bubble up), and pour over graham crackers evenly, spreading with a heatproof spatula if needed.2012-12-01 12.50.44

4. Bake for 12 to 15 minutes. As it bakes, you will see it bubbling  up but make sure it doesn’t burn.  If it starts too, remove from oven and reduce the heat to 325F,  then replace the pan.2012-12-01 13.03.51

5. Remove from oven and immediately cover with your peanut butter chips. Let stand 5 minutes, then spread with an offset spatula. (the peanut butter chips didn’t melt as well as the chocolate, so I popped it back in the oven for a minute or two to help melt them. )2012-12-01 13.05.35

Let cool completely, then break into pieces.  It stores well in an airtight container until ready to serve, mine didn’t take a big container, because my son and granddaughter Cholie showed up just as I was finishing them.  They of course helped taste test them.  Many Many Times.

  1. I made the mistake of trying to do the crack candy with the semi sweet chips and used some butterscotch to sprinkle on top. Didn’t use this peanut butter one…however the butterscotch didn’t want to melt and I had to scrape them off and redo it with semi sweet choc. We love the version with chocolate on top!
