Zucchini Bread

So what do you do with left over zucchini?  Well, I bought way to many at the farmers market last weekend.  I have fried it, made a compote with peppers, sautéed it as a side dish, and I still have some left.  So now it is time to bake with what I have left.  I looked everywhere for my grandmothers zucchini bread recipe, and could not find it anywhere.  I checked with a friend on Facebook for a recipe and she directed me to Paula Deens website.  Now y’all know how much I love Paula, but I try not to make all her recipes all the time.  I like to make my own or my family’s, but this time, I am glad I did use hers.  My bread turned out wonderful…..but of course it did.  Ms. Paula only has the best recipes.  Thank you Trina for leading me to her recipe.

So with all credits to her, you can find the recipe here.  I did leave out the nuts though.  Never been a big fan of walnuts and such in my zucchini or banana bread, but that’s just a thing with me.  You all put them in, they are great.

Here’s my beautiful loaf freshly cut.  I love the little strips of green from the bits I left on.  I should have left more skin on the zucchini’s.  I think it makes the loaf look more interesting.

I began cleaning and shredding my zucchini’s:

Then mixed it in with all my wet ingredients:

Mixed together the dry ingredients, and then added the wet to the dry: (Notice the Paula Deen wooden spoon I am mixing with?  I guess I was meant to use her recipe today….LOL)

  1. Great pictures Greg. Wish this were your recipe though. You always seem to add new fun things to recipes. Keep changing it up, though PD does have great family recipes. Can’t wait to see your vids on here.
