Ingredients:
1 or 2 ham hocks
1 large onion – diced
3 medium carrots – shredded or diced
1 pound dried cannellini beans soaked overnight, or 4 cans
6 cups low sodium chicken stock
3 cloves minced garlic
1/2 teaspoon thyme
salt and pepper to taste
Combine all ingredients except the salt/pepper in slow cooker crock
Cook 4 hours on high, 6 hours on high or until beans are the consistency you like
1 hour prior to being done, smash about half cup of beans against side of crock to thicken sauce.
After finished cooking, taste again and season with salt/pepper as needed.
