One of my favorite meals mom made when I was growing up was Swiss Steak. I just thought the rich sweet tomato taste of the sauce, along with all the onions was the best. She cooked it all day long in the crock pot or in the oven. The meat just fell apart. So after someone asked me for a recipe for Swiss Steak today, I decided I should just make it myself. I am so glad I did. It brought back such great memories. I think y’all are going to love this recipe as well.
Ingredients:
- 2 tsp olive oil
- 3 large chopped steak (you can use round steak)
- salt and pepper to taste for seasoning
- 1 tsp garlic powder
- 1-2 tablespoons corn starch
- 1 large white or yellow onion
- 1 can garlic roasted diced tomatoes (including juice)
- 1 cup water
- 3 tablespoons tomato paste (forgot to show in video)
- 1 tablespoon better than bouillon roasted beef
- 1 cup of diced peppers
- Turn instant pot on saute to heat…add olive oil
- Season the chopped steaks with salt/pepper/garlic powder
- Sprinkle chopped steaks with corn starch to lightly coat.
- Individually brown the steaks in the instant pot and remove to a small plate
- Mix the better than bouillon to the water and put just a bit in instant pot to deglaze.
- Add the tomato paste and saute for 2 minutes.
- Slice onions in half moons and add to the instant pot and saute slightly.
- Add in the peppers and the remaining water/bouillon mixture
- Add can of diced tomatoes
- Cook for 1-2 minutes.
- Add steaks back in.
- Put lid on and set at Hight pressure for 30 minutes
- Once 3o minutes cooking time ends, do a natural pressure release for 10 minutes
- Release remaining pressure and remove lid.
- Remove steaks and taste. Adjust with more salt and pepper to taste
- Turn Instant Pot to “saute”
- Add 1 tablespoon corn starch to small bit of water and mix well.
- Add to the sauce and thicken to your desired consistency.
- Spoon sauce over your steaks and enjoy.
