Mom always takes the time to make most of her meals from scratch. This one is no exception. It is her Homemade Lasagna that I am telling you is out of this world. Just watch when she cuts it at how well it stays together. Mine never does. The flavors are amazing and you will not want to stop eating her Homemade Lasagna if you make it. Meats Sauce:
1 1/2 lbs. ground beef
1 cup chopped onions
3 cloves garlic minced
2 tablespoons Italian seasoning
Salt/pepper to taste
1 large can diced tomatoes
1 (12 oz.) can tomato paste
1/4 cup sugar
Cheese Mixture:
16 ounces mozzarella cheese
1/2 cup Parmesan cheese
3 cups of Ricotta or Cottage Cheese
2 tablespoons dry parsley
1-2 tablespoons oregano
2 eggs
1/2 teaspoon pepper
Parmesan Cheese for the top
Brown the ground beef with the onions, then add garlic once browned.
Add in the tomatoes, tomato paste, Italian seasoning, sugar and salt/pepper. Stir to mix in.
Turn down on low and let simmer for 1hour.
While meat sauce is simmering you can mix together the cheese mixture and cook the lasagna noodles.
In a large bowl mix together all the ingredients for the cheese mixture.
In a prepared 9×13 layer on layer of lasagna noodles.
Reserve about 1 1/2 cups sauce.
Now add a layer of the meat sauce followed by cheese mixture.
Follow again with another layer of each till out of lasagna noodles or pan is full.
Spread reserved meat sauce over top and sprinkle with Parmesan Cheese.
Bake in a preheated 350°F for 45-60 minutes, until bubbly and lightly browned.
Let cool 15-20 minutes before cutting.
