This is just a quicker way of making my Christmas Pizzelles by using a cake mix. This lets you change of up the flavor and color and decreases all the from scratch ingredients. We all need a little short cut now and then. Let me know what you think about this version and y’all enjoy.
1 cake mix
4 eggs
1 cup melted butter
1 teaspoon vanilla
2 teaspoons sugar
2 teaspoons corn starch
6 tablespoons flour
Mix all ingredients together in a large bowl. Make sure it is mixed well.
Let sit 10 minutes to allow flour to hydrate
Scoop in just over tablespoon amounts to the Pizzelle griddle
Cook 20-30 seconds, until they stop steaming
Transfer to cookie cooling rack and dust with powdered sugar.
Allow to cool and crisp up before placing in storage container.
