Coconut Oatmeal Scotchies

 

Y’all this is my Grandma Jeans cookie recipe. She made it every year at Christmas and became one of my favorites. To this day I still make these every Christmas. Let me know what you think about her version and y’all enjoy.

 

Ingredients:

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs (room temperature)
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup oats
  • 1/2 cup butterscotch chips
  • 1 cup coconut

Preheat oven to 350°F

  1. Cream together the shortening, sugars and eggs.
  2. Mix in the vanilla
  3. In seperate bowl combine the flour, baking soda, baking powder and salt.  Mix well
  4. Add into the dry ingredients the oats, chips and coconut
  5. Combine the dry  ingredients into the wet ingredients about 1/3 at a time. Mix well.
  6. Scoop out with a small cookie scoop onto prepared baking sheet
  7. Bake for 12-15 minutes until done (check at 12 minutes..everyones oven bakes a bit differently
  8. Cool on baking rack for 10 minutes and then move to cook cooling rack.
