Y’all this is my Grandma Jeans cookie recipe. She made it every year at Christmas and became one of my favorites. To this day I still make these every Christmas. Let me know what you think about her version and y’all enjoy.
Ingredients:
- 1 cup shortening
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs (room temperature)
- 1 teaspoon vanilla
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup oats
- 1/2 cup butterscotch chips
- 1 cup coconut
Preheat oven to 350°F
- Cream together the shortening, sugars and eggs.
- Mix in the vanilla
- In seperate bowl combine the flour, baking soda, baking powder and salt. Mix well
- Add into the dry ingredients the oats, chips and coconut
- Combine the dry ingredients into the wet ingredients about 1/3 at a time. Mix well.
- Scoop out with a small cookie scoop onto prepared baking sheet
- Bake for 12-15 minutes until done (check at 12 minutes..everyones oven bakes a bit differently
- Cool on baking rack for 10 minutes and then move to cook cooling rack.
