Coconut Thumbprint Christmas Cookies

 

Y’all, when it comes to Christmas I don’t think of gifts, I think of food.  More specifically, all the cookies and candies my mom and grandmothers used to make.  Grandma Jean used to make these cookies and I fell in love with them.  I have been making them every year at Christmas and they always bring back so many memories of being with her in her kitchen.

Ingredients

  • 1 cup Unsalted Butter at room temp
  • 2/3 cup Granulated Sugar
  • 2 egg yolk
  • 1 tsp Vanilla Extract
  • 2 cups All Purpose Flour
  • 2 Egg white lightly beaten  
  • 1/2 cup Coconut Flakes
  • 1/2 teaspoon salt
  • 1 cup  Jam
  1. Preheat the oven to 350F. Line a baking sheet with parchment paper.
  2. Combine the butter and granulated sugar in stand mixer bowl and cream on low until fully creamy and incorporated.
  3. Add in the egg yolks and mix well.
  4. Add Vanilla.
  5. Add in flour and mix on low till dough forms
  6. Roll 1-inch balls of dough and then roll each ball in the beaten egg whites and then in the coconut flakes.
  7. Place the balls on the baking sheet, leaving a 2-inch space between them.
  8. Using your thumb or teaspoon sized measuring spoon, press an indentation into the center of each cookie.
  9. Fill the indentation with jam.
  10. Bake the cookies  9-10 minutes until the bottom of the cookies is golden brown.
  11. Cool the cookies on a rack and then serve.

I like to sprinkle mine with a bit of powder sugar to serve.
