Home Made Pasta Dough

Ingredients for Pasta Dough (linguine/ravioli/spaghetti)
  • 2 cups all-purpose flour
  • 1 pinch salt
  • 1 teaspoon olive oil
  • 2 eggs
  • 1 1/2 tablespoons water

First mix the flour and salt together in stand mixer with hook attachment.   Add eggs one at a time, then add the olive oil till mixed. Knead the dough until smooth, 8 to 10 minutes; add more flour if the dough is too sticky. Form the dough into a ball and wrap tightly with plastic. Refrigerate for 1 hour.

Then cut into 4 pieces and run through the pasta attachment on front of stand mixer, starting at 1 and run through 2-4 times, then lower and run through at each level twice till your at level 5.

Once rolled out, place on lightly floured board

Spread filling on one side

Cover with second sheet of pasta

Cut with rolling pin and roller
