This is sort of a quick and easy version of Jambalaya, but with a few twists. It is so easy to throw together and your family is going to love it. Let me know what you think about this version and y’all enjoy.
Ingredients:
1 1/4 cup white rice
2 tablespoons olive oil
12 ounce package smoked sausage
1 red bell pepper sliced
1 yellow bell pepper sliced
1 small onion sliced
1 can diced tomatoes
1 can pinto beans
4 cloves garlic
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon paprika
pinch red pepper flakes
2 cups water
1 heaping tablespoon of Better Than Bouillon® Roasted Chicken
Slice the sausage and brown on each side in a large skillet.
Add the sliced onion and peppers.
Add in your spices along with diced tomatoes and stir to incorporate.
Add in your garlic and watch it so it doesn’t burn. Add salt/pepper to taste.
Add pinto beans and stir well.
Now add the rice and add to mixture the water and Better Than Bouillon®
Cover and let simmer over low heat for 8-12 minutes till rice is cooked
