This is one of my favorite summer salads. It is packed with crisp cucumbers, juicy ripe tomatoes, and fresh herbs and all topped off with a delicious creamy sour cream dressing for one amazing summer side dish! It is a salad that you can almost always find in my refrigerator once the garden has started producing. Give it a try and let me know what y’all think. Ingredients:
- 2 large cucumbers
- 1 large tomato
- 1/2 medium sweet onion
- 1/2 cup sour cream
- 4 tablespoons Dill Weed
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 2 tablespoons vinegar
- Peel and dice the cucumber. Slice in half and deseed with a spoon.
- After seeding each half, dice into 1/2 inch or so pieces and place in a medium bowl.
- Dice your tomato in about the same size pieces and add to the cucumber.
- Now do the same with the onion, but dice in pieces about half the size of the tomato and cucumber.
- Add the diced onion to bowl and set aside.
- In a small bowl mix remaining ingredients. Taste for salt, add if needed.
- Pour mixture over the cucumber/tomato/onion mixture and mix well.
- Refrigerate for at least 2 hours.
- If serving at a picnic or outside event, keep chilled due to the sour cream.
