Creamy Cucumber Tomato Salad

This is one of my favorite summer salads.  It is packed with crisp cucumbers, juicy ripe tomatoes, and fresh herbs and all topped off with a delicious creamy sour cream dressing for one amazing summer side dish!  It is a salad that you can almost always find in my refrigerator once the garden has started producing.  Give it a try and let me know what y’all think.  And thank you for stopping by my Cumberlachia Farmstead Kitchen.  Love y’all and God Bless.

 

Ingredients:

  • 2 large cucumbers
  • 1 large tomato
  • 1/2 medium sweet onion
  • 1/2 cup sour cream
  • 4 tablespoons Dill Weed
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 2 tablespoons vinegar
  1. Peel and dice the cucumber.  Slice in half and deseed with a spoon.
  2. After seeding each half, dice into 1/2 inch or so pieces and place in a medium bowl.
  3. Dice your tomato in about the same size pieces and add to the cucumber.
  4. Now do the same with the onion, but dice in pieces about half the size of the tomato and cucumber.
  5. Add the diced onion to bowl and set aside.
  6. In a small bowl mix remaining ingredients.  Taste for salt, add if needed.
  7. Pour mixture over the cucumber/tomato/onion mixture and mix well.
  8. Refrigerate for at least 2 hours.
  9. If serving at a picnic or outside event, keep chilled due to the sour cream.
