This is a recipe that my Mother and Grandmother used to keep me and my sister well fed! It is very kid friendly, and adults like it too! It is a truly southern creation and so quick and easy to make.
INGREDIENTS:
- 1.5 pounds ground beef
- 1 onion, finely diced
- 4 pounds potatoes and sliced about 1/4 inch
- Salt and pepper
- 8 ounces cheddar cheese, shredded (about 2 cups)
- 2 10.75-oz cans condensed Cream of Bacon soup
- 1 cup milk
- 1/2 teaspoon salt
- 1 teaspoon garlic powder
- 1/4 teaspoon pepper
INSTRUCTIONS:
- Spray a 13×9 baking dish with cooking spray and preheat oven to 350 degrees.
- Add ground beef to skillet and brown, drain most but not all of the fat and then add onion to a large skillet, season with salt and pepper then cook until onions are translucent.
- Add one layer of potato slices to the bottom of the baking dish. Sprinkle potatoes with salt and pepper. Top potatoes with 1/4 of the ground beef mixture.
- Now add 1/4 of shredded cheese over top.
- Repeat this process three more times.
- Combine cream of bacon soup, milk, salt, garlic powder and pepper and whisk until smooth and combined.
- Pour mixture over to of the casserole.
- Cover dish with aluminum foil then bake at 350 degrees for one hour.
- Remove foil then continue baking for an additional 15-20 minutes or until potatoes are tender and dish is light golden brown and bubbly.
