The most treasured items I have are the recipes from mom, my grandma’s, aunts and great grandmothers. This is just one those recipes. It’s an old fashioned Oatmeal Pie.
- 1 pie crust
- 4 eggs beaten
- 3/4 cup brown sugar packed
- 1/2 cup white sugar
- 2 tablespoons flour
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1/4 cup unsalted melted butter
- 1 cup old fashioned rolled oats
- 1 cup light corn syrup
- Whip the eggs together in a large bowl.
- Mix in the sugars and cream together till sugars dissolve
- Add in flour and mix well
- Add in the cinnamon, vanilla and melted butter and mix well
- Add in the oats and mix together well.
- Now add in the corn syrup and mix very well.
- Pour into prepared pie crust
- Bake for 45-55 minutes in a preheated 350°F oven…Check around 40 minutes. All ovens cook differently
