Mom is always looking for great ways to use vegetables from her garden and make a lighter and easier dinner idea that won’t heat up her kitchen using the stove or oven. We ate so many garden salads in the summer. And this one is so easy to make. Let me know what you think about her version and y’all enjoy.
Ingredients:
1 large green pepper – diced
1 yellow pepper – diced
1 orange pepper – diced
2 1/2 – 3 cups cherry tomatoes – halved
1 box bowtie pasta cooked
Italian Dressing
Pre cook your pasta to al dente
Now cut all your peppers in small bite sized diced pieces
Add the pasta to a large bowl, then add in the peppers and mix well.
Add about 1/2- 3/4 cups Italian Dressing, according to how you like yours
Add some dried parsley to add color if you like.
