This is a recipe that I have been seeing for some time on the internet and Pinterest. I did try it early on but wasn’t quite captivated by it’s flavors. So recently I decided to try it again and put my own spin on it. I only changed a few things but now I think we have a winner. Ingredients:
3- 3 1/2 – cups chopped cooked chicken
4- oz cream cheese, softened
1 cup cottage cheese
½ cup sour cream
1 cup pimento cheese
8 strips bacon cooked and crumbled
1 can cream of bacon soup (or cream of chicken)
1/2 tsp garlic powder
1/2 tsp dried onion powder
1/2 tsp dried sweet basil
1 sleeve Club® crackers, crushed
5 tablespoons butter, melted.
- Preheat oven to 350ºF and spray a 9×9-inch baking dish with cooking spray.
- Combine chicken, cream cheese, cottage cheese, sour cream, bacon, pimento cheese, garlic powder, onion powder, basil and cream of bacon soup.
- Spread into prepared pan.
- Combine crushed Club® crackers and butter, sprinkle over chicken mixture..
- Bake uncovered 30 to 40 minutes until bubbly and toasted golden on top.
