This vintage Tuna Macaroni Salad may be one of my favorite go to recipes for a quick summer meal. It is so easy to put together and we usually have all the ingredients in our pantry already. This is one summer salad I can remember mom making all the time for us. Maybe because it was so cost efficient, but also because it tastes so good. Do y’all make this? - 1 box macaroni elbows – cooked, drained, cooled
- 3 hard boiled eggs
- 1/2 onion
- 3-4 tablespoons chow-chow or relish
- 1 cup mayonnaise
- 1 green pepper diced
- 1 2 ounce jar pimentos
- 2 or 3 cans tuna in oil
- salt and pepper to taste
- Cook and drain your elbow macaroni then run under cold water to cool/stop cooking.
- Dice your eggs, onion and green pepper.
- Add all ingredients to a large bowl and mix well.
- Taste and add salt/pepper as needed
