I’ve spent this weekend making many different recipes. So by the time I got to Sunday evening I only had a few items left that I hadn’t utilized yet. So I had to put together something with a pepper, and onion and spicy sausage that I had planned to use in my biscuits and gravy this morning for breakfast. Yes, I do like to spice up mamaw’s biscuits and gravy every once in a while.
So deciding on a pasta dish I next had to come up with something new. Of course I could have just done a simple marinara sauce using sausage but I needed to finish the weekend off on a high note. I think y’all are going to like what I came up with. I had to go back for a second helping so it must have had what I was looking for tonight. Hope you find it as tempting as I did.
Ingredients:
1 pound spicy ground sausage (I prefer Purnell’s “Old Folks” Sausage)
1 green pepper-minced
1 sweet onion-minced
4 tablespoons bacon fat
4 tablespoons flour
2 12ounce cans stewed tomatoes
1/2 cup heavy cream
1 tablespoon dried oregano
1 garlic clove-minced
1/4 cup Parmesan Cheese
1/2 teaspoon red pepper flakes
1 box farfalle pasta
Break up and brown sausage in large pan over medium heat. While browning sausage, bring water to boil to cook pasta. Once sausage is browned, add pepper and onion and saute till softened.
Add the bacon fat and then sprinkle the flour over mixture and combine. Continue to cook over medium heat for 3-5 minutes to cook flour taste out of mixture. Then add the stewed tomatoes, cream, garlic, oregano, Parmesan and red pepper flakes and drop temperature to low and simmer 5-6 minutes.
Add the cook pasta to the mixture (don’t discard the pasta water, you can add a bit of this to mixture if it is too thick). Combine well and add any pasta water to come to the consistency you desire.
