There are always those days when you just know you’re not going to have enough time to get breakfast made. Whether it’s because you have to get the kids off to school or it is a holiday morning and you don’t have time to do breakfast and prepare your holiday meal. The great thing is that the whole mess is cleaned up the night before and you wake up to a delicious home cooked breakfast.
This is an easy go to breakfast casserole that you can make your own by changing out ingredients your family prefers. Bacon is always good in this as well as all sorts of fresh vegetables right out of the garden. Your family is going to just love this.
Ingredients:
- 1 dozen eggs
- 1 cup milk
- 1 package (32 oz.) of frozen hash brown potatoes.
- 1 package frozen spinach, thawed and drained (0ptional).
- 1 lb of sausage, browned and drained (I prefer Purnell’s “Old Folks” Sausage)
- 1/2 cup green onions – diced
- 1 green or red pepper – diced
- 3/4 pound cheddar cheese – shredded
- 1/4 teaspoon garlic powder
- salt & pepper to taste
Directions:
1. Layer potatoes, spinach, sausage, onions, green pepper and cheese in the slow cooker in two layers.
2. Add cheese.
3. Beat the eggs, milk and garlic powder, salt & pepper together.
4. Pour over the whole mixture.
5. Cook with slow cooker on low for eight to ten hours or 4-6 hours on high, until eggs are set and thoroughly cooked.
