Apple Nut Muffins

I changed this recipe around a little bit using my great grandmother Blanche’s Apple Nut Cake Recipe.  They turned out very moist and I love being able to grab a muffin on the run in the morning.

I hope you like.  if you would rather it as a cake, just poor in an oblong baking dish and bake.

Ingredients.

• 2 cups sugar
• 1 cup cooking oil
• 3 eggs
• 4 cups sliced apples
• 1 cup chopped nuts
• 2 1/2 cups flour
• 1 t. salt
• 1 t. cinnamon
• 2 t. baking soda
• 1 t. vanilla

Mix together the sugar, oil and eggs, add flour, salt, cinnamon, baking soda and vanilla. Then stir in the apples and nuts.

Pour in muffin tins and bake for 50-60 min at 350 degrees.
