I know there are as many recipes for chili as there are people who say they have the best secret recipe for it around.
Now for some reason I like to dip peanut butter sandwiches in my chili. I think it is an Ohio thing. I’ve met a couple people down here in Florida who also do this, and found out they are from Ohio as well. Now we have converted a lot of other people who do this now too. I know it may sound weird, but give it a try. You may just get hooked. I also like to top my chili with some shredded cheese and cut up green onions. I hope you all enjoy this recipe.
Ingredients:
2 lbs. lean ground beef
1 lb. lean ground pork
4 garlic cloves, finely chopped
1 cup onion
8 oz. tomato sauce
1 cup water
3 1/2 Tablespoons chili powder
2 Tablespoons ground cumin
2 teaspoons smoked paprika
2 teaspoons oregano leaves
2 teaspoons sugar
1/2 teaspoon coriander, ground
1 square unsweetened chocolate
1 cinnamon stick
1 teaspoon cornmeal
1 teaspoon flour
1 teaspoon warm water
Directions:
1. In a large saucepan brown the ground meat , drain the fat.
2. Remove meat from saucepan.
3. Add the garlic and onion to the saucepan, cook and stir until tender.
4. Add meat and the tomato sauce, water, chili powder, smoked paprika, oregano, sugar, coriander, cocoa, and cinnamon stick. Mix well.
5. Bring to a boil then reduce heat and simmer, covered , for 2 hours.
6. In a small bowl, stir together the cornmeal and flour, then add the warm water and mix well.
7. Stir into chili and cook, covered, for an additional 20 minutes.
8. Add hot sauce to taste.
