This is a great side dish that I have changed up just a bit to make it just a bit more tasty. Let me know what you think about this version and y’all enjoy.
Ingredients:
20 ounces frozen corn
2 tablespoons butter
1/2 teaspoon smoked paprika
2 teaspoons sweet basil
1 teaspoon parsley
2 ounce cream cheese
2-3 tablespoons honey
3-4 tablespoons sundried tomatoes
salt/pepper to taste
Melt butter in a cast iron skillet on high. Once melted, add corn.
As corn starts to cook, add in the paprika, basil and parsley. Mix well.
Add in the cream cheese and honey and stir to combine and melt the cream cheese.
Dice the sundried tomatoes and add to the corn and mix to combine. Cook 2-3 minutes
Salt and pepper to taste.
