Ingredients:
- 2 lbs boneless skinless chicken thighs or breast
- 1 head of cauliflower broken/cut into pieces
- 1 onion cut in large chunks
- 1/2 bag of baby carrots
- 10.75 oz cream of chicken soup (low sodium preferred)
- 1 envelope dry ranch dressing/seasoning mix
- 2 teaspoons flour
- 1 cup chicken stock
- 2 cloves garlic minced
- 1 teaspoon oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Place cut cauliflower in bottom of slow cooker.
- Top with the chopped onion and baby carrots
- Sprinkle flour over the veggies.
- Dollop the creamed soup over the top of the vegetables along with the garlic.
- Sprinkle ranch mix over the top, all the seasonings, and add the chicken stock.
- Salt and pepper the chicken and add the chicken to the slow cooker, cover and cook on low 6-8 hours, high 3-5 hours.
