Mom put together a type of Tex-Mex casserole with pork chops that is just out of this world good. It is so simple yet so tasty so give her Tex-Mex Pork Chop Casserole a try and let us know what you think.
Ingredients:
- 2 tablespoons oil
- 4-6 pork chops
- 1 large sweet onion
- 1 green pepper
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon each salt and pepper to taste
- 2 cups corn
- 1/2 cup salsa
- 14 ounce can of crushed tomatoes
Directions
- Preheat oven to 350°F
- Add oil to skillet and then brown pork chops in a skillet over medium high heat
- While pork chops are browning cut onions and peppers in 1/2 slices
- Transfer pork chops to another dish/skillet and reserve the juices in skillet.
- Reduce heat to medium and scrap the skillet of all the pieces of chops.
- Add the onions and peppers to skillet and sauté for 2-3 minutes
- Add your seasonings to pan and stir to combine
- Add salsa, corn and crushed tomatoes, stir to combine and sauté another 2-3 minutes.
- Transfer to and cover pork chops in large casserole dish or even another larger cast iron skillet and add the pork chops
- Cover and bake for 45 minutes.
