Ingredients:
1 tablespoon oil
4-6 bone-in and skin on chicken thighs
salt and pepper to taste
1 onion, diced
20 cloves garlic, peeled
2 teaspoons fresh thyme, chopped (or 1 teaspoon dry thyme)
2 tablespoons flour
1 cup chicken broth
1/2 cup parmesan cheese, grated
salt and pepper to taste
Heat the oil in a large skillet over medium-high heat, salt and pepper the chicken and add it to the skillet to brown, about 3-5 minutes per side, before setting aside. Don’t cook thoroughly.
Add the onion and garlic and sauté until the onions are tender and the everything is lightly browned, about 3-5 minutes.
Sprinkle in the thyme and flour and cook for a minute to get the flour taste out..
Add the chicken broth to the pan and scrape the brown bits off of the bottom of the pan with a wooden spoon while the broth is sizzling when added.
Mix the Parmesan cheese into the sauce and stir to combine.
Season with salt and pepper to taste.
Add the chicken, and place uncovered in a 350° preheated smoker.
Add wood chips or chunks to start the smoking process.
Smoke for 20-30 minutes until internal temperature of the chicken is at least 165°F.
Let sit 15 minutes to cool a bit and let gravy/broth thicken.
