This is a twist on moms regular pudding. She made it into a Peanut Butter-Butterscotch Pudding. I’ll tell you what, nothing better, unless you add some banana’s. I love this stuff. Let me know what you think about this version and y’all enjoy.
Ingredients:
2 1/2 cups milk
1/4 cup sugar
3/4 cup brown sugar
2 tablespoons butter
3 egg yolks
1/4 cup corn starch
3/4 – 1 cup of peanut butter (per your taste)
In large sauce pan over medium heat, put half your milk and the sugars and stir well to combine.
Now add in the corn starch and the remaining milk. Stir very well to combine.
You must stir the entire time so it doesn’t scorch.
Stir over medium high heat, stirring entire time till it thickens.
Temper the eggs and add into the mixture.
Add the butter and stir into mixture.
Return to medium heat, add vanilla and cook for 5 minutes till thickened.
Remove from heat and let cool for a few minutes before adding in the peanut butter.
Add peanut butter and stir well till fully incorporated.
