Smothered Cajun Pork Medallions
My Smothered Cajun Pork Medallions are such a great tasting dish any night of the week. You can of course substitute pork chops if you like. Let me know what you think about this version and y’all enjoy.
1 pork tenderloin cut in 1 inch medallions
2 tablespoons butter
3 cloves minced garlic
1 onion diced
1 green bell pepper diced
2 stalks celery diced
1 tablespoon Cajun seasoning
1 tablespoon oregano
2 teaspoons Worcestershire sauce
1-2 carrots diced
1 1/2 tablespoon flour
2 cups chicken stock
salt/pepper to taste
Brown the pork in a pan over medium high heat and then remove from pan.
Add in the butter and onion, pepper, celery. Add salt and pepper. Cook to soften
Add in garlic. Watch so it doesn’t burn, add carrots and stir to combine.
Add in Cajun seasoning and oregano and mix to combine.
Add flour and stir well to combine, cook for 2-3 minutes to get the raw flour taste out.
Add in chicken stock and mix well.
Taste for salt/pepper.
Nestle the the pork back into the mixture for 15-20 minutes until pork reaches at least 145°F
