Bacon Fried Apples

Ingredients:

  • 4 strips bacon
  • 4 tart apples
  • 1/4 teaspoon salt
  • 1/8 teaspoon ginger
  • 1/2 – 1 teaspoon cinnamon
  • 2 tablespoons butter
  • 1/4 cup brown sugar
  1. Cook bacon over medium heat until crisp, set aside. Do not drain fat.
  2. Add sliced apples to the bacon fat with salt, ginger and salt,  and cook for 3-4 minutes over medium heat.
  3. Once they are almost fork tender add the brown sugar and butter.  Cook for 2-3 minutes.
  4. Crumble the bacon and mix in with the apples.
  5. Serve hot alone, or over biscuits with some whipped cream or ice cream.

BBQ Beef Pasta in Lodge® Cast Iron Dutch Oven

 

So mom joined me for a surprise visit at our Cumberlachia Farmstead.  So of course we are going to do a cooking video together.  She had so much fun exploring the land and also helping us cut down some small brush and trees and even taking a walk down the mountain side to our creek.

We decided just to throw some things together and make our own recipe.  Something hardy and filling after a long day working on the land.  Well we accomplished just that, and I must say, it was delicious as well.  So give our concoction a try and let us know what you think.  Love y’all and stay safe.

 

Ingredients:

    • 2 lbs. ground beef
    • 2 red bell peppers – diced
    • 1 medium onion – diced
    • 1 teaspoon salt
    • 1 tablespoon paprika
  • 2 tablespoons apple cider vinegar
  • 2 1/2 cups beef broth
  • 3/4 cup ketchup
  • 1/2 cup brown sugar
  • 4 cloves garlic minced
  • 1 cup corn
  • 1 can Pinto Beans
  • 1 lb. box Rotini Pasta (uncooked)
  • 1 cup grated cheddar cheese
  1. Cook the ground beef until done and drain the fat.
  2. Add the peppers and onion and cook until softened.
  3. Now add the salt, paprika, vinegar, beef broth, ketchup, brown sugar and garlic and stir well.
  4. Cook the mixture 2-3 minutes then add in the corn and pinto beans along with the pasta.
  5. You may need to add more stock to just cover the pasta.
  6. Cook 12-15 minutes, stirring every few minutes to assure all pasta is submerged.
  7. Once pasta is cooked to your taste, remove from heat and add the cheese.
  8. Stir well to combine and let sit a minute or two to melt the cheese.
  9. Stir again and serve.

Ingredients:

2 tablespoons butter
1/2 large white onion
1/3 cup flour
4 cups chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon thyme
2 cups milk
2/3 cup heavy cream
2/3 cup sour cream
1/2 block cream cheese cut into chunks
4 large potatoes diced in 1/2 inch pieces and cooked almost done.
6-8 strips bacon cooked/cooled/crumbled

In a large Dutch oven over medium heat, melt the butter.
While butter is melting, dice the onion and then add to the pan.
Sauté onion till almost translucent.
Add the flour and stir into the butter to make a rouge.
Slowly add the chicken broth and mix to thin out the flour mixture.
Bring this to a slow simmer and add in the spices, milk, heavy cream, sour cream and cream cheese.
Now add the potatoes and bacon and mix into the liquid.
Cover and cook on low to medium low for 20-30 minutes.
Serve with additional sour cream, cheese and bacon pieces.

This is my version of an old recipe. It’s my Ground Beef Bacon and Beans and I did them over an open fire in my @Lodge Cast Iron on my Cumberlachia Farmstead. Let me know what you think about this version and y’all enjoy.

Ingredients:
1 lb. ground beef
6-10 strips of bacon cut into lardons
1 medium onion diced
1 can pinto beans
2 can of cannelloni beans
2 cans black beans
1 large can kidney beans
1 small can tomato paste
1/2 cup ketchup
2 tablespoons Worcestershire sauce
1/4 cup molasses
2 tablespoons spicy mustard
1 tablespoons onion powder
2 tablespoons garlic powder
1/4 teaspoon ginger
1/2 teaspoon chili powder
1 teaspoon smoked paprika
1/2 cup brown sugar
salt/pepper to taste

Brown the ground beef, bacon and onion over medium high heat till browned.
Remove from heat and add in the tomato paste and mix in meat mixture.
Add in all remaining ingredients and stir well to combine.
Cook in a 300°F oven for 2-3 hours.
Stir a couple times to mix.

Southern Fried Pickles

This is a great southern snack that you can find in almost any southern burger joint.  They are a quick and easy snack to make at home and they are so tasty.  Give them a try and let me know what y’all think.

Ingredients

1- 1 1/2 cups pickles (sweet or dill)

Batter (combine all)

  • 1/2 cup flour
  • 1/2 cup buttermilk
  • 1 teaspoon baking powder
  • 1 egg
  • pinch of salt/pepper

Mix this all together.

Dredge  (combine all)

  • 3/4 cup flour
  • 2 tablespoons corn starch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt/pepper to taste
  1. Heat about 2-3 inches of cooking oil in a cast iron skillet to 375°F.
  2. Dip the pickles in the batter, then into the dredge mix.
  3. Drop carefully into the hot oil away from yourself.
  4. Cook 1-2 minutes each side till lightly browned
  5. Remove from oil and place on a paper towel to drain.
  6. Season with a bit more salt if you like.

Ingredients:

1 pound ground chuck
2 medium or large onion chopped chunky
1 green bell pepper diced
1 cup beef stock
1 can red beans
1 can diced tomatoes
1 tablespoon tomato paste
1 (8ounce) can picante or tomato sauce
3-4 cloves garlic minced
1 teaspoon ground mustard
1 teaspoon smoked paprika
1 teaspoon cumin
1 tablespoon chili powder
salt/pepper to taste
2 cups dry macaroni cooked
2 cups shredded cheddar cheese

Brown off the ground chuck over medium heat and then add onions and peppers. Cook till tender.
Add in the remaining ingredients except the macaroni and cheese.
Remove from heat.
Taste for salt and pepper.
Add in 1/2 the cheese and mix well to incorporate.
Sprinkle remaining cheese over top and toast under broiler or put on lid and let melt.
Spread remaining cheese over top
