My holiday table is never complete without my twice baked sweet potatoes, or sweet potato casserole. But all that butter and sugar isn’t always the best choice. So this is a recipe I like to use to change it up a little and reduce all those calories. Very simple, yet so delicious. I hope y’all enjoy.
Ingredients
- 2 pounds sweet potatoes, sliced and cooked
- 2 tablespoons margarine, melted
- 1/2 teaspoons ground cinnamon
- 16 apricot halves, dried
- Orange slices, fresh
Directions
- Arrange the sweet potatoes in a shallow baking dish.
- Combine the margarine and cinnamon.
- Pour over the potatoes.
- Arrange the apricot halves on top.
- Cover the dish and bake in a 425F oven for about 15 minutes.
- Add the orange slices and serve.
